Endive

Endive. A character from Chowder. I've always known it as some lettuce-y thing, perhaps deep green, with leaves like holly, except more spindly and elongated. Well, I was wrong. Endive is to spindly holly the way a stingray is to a blubbery blue whale. Endive looks like this:
and I never knew.

 So... what do I do with endive? Why would I try this? Well, it was homework, from my mentor at Monell. We're discussing bitter foods and why people eat them, and of course, genetics plays a large role. For example, I personally don't find broccoli bitter at all, but some people with a different haplotype think that it is bitter. My mentor thinks that endive is really bitter, but for me... it was pretty much lettuce. Watery, slightly lettuce-stem-y, ending with a slight bitter note. Bitter melon is definitely more bitter. Raw asparagus is more bitter. Heck, weak coffee is more bitter, in my opinion. See, I love Monell because I'm doing research, sort of, by exploring new foods and applying these scientific taste ideas into my life. Another perspective that I've never considered is this idea, which I've simplified here for lay understanding: 

In a sandwich, there's:
1. Sweet in onion
2. Umami in tomato
3. Bitter in watercress
4. Sweat odor in cheese
5. Boar taint in ham

Let's say I have the genotype +/+ for 1. and 2. Let's say SP has the +/+ genotype for 3. 4. and 5. This means that I'd enjoy the sandwich much more than SP would.

I know it's an oversight, but I've never considered haplotypes in taste receptors as a reason why people would dislike the taste of a soup or a marinade. It just never occurred to me.
My mentor told me that they make the white endive by putting opaque bags over them so that there is no chlorophyll development (therefore, no green pigment). This reminds me of white asparagus. I guess I personally prefer there to be chlorophyll, because I like green. Also, chlorophyll has magnesium, which I would ingest, and I don't know enough plant biology to know whether white plants have magnesium stored elsewhere...
 So, what to do with endive? Cook it? I prefer to eat leafy vegetables raw, though. I just ripped it up and stuck it in some spaghetti with chili sauce and Chinese spiced bamboo shoots.
I also stuck some in a crunchy peanut butter sandwich with dried cranberries. This isn't weird for me because I love lettuce and peanut butter sandwiches. I also love cucumber and peanut butter sandwiches. Actually, I'm sure any vegetable goes well with peanut butter. Yes, even tomato (tomato in a peanut curry would probably be fantastic. I might try that one day).

Dumplings!

Today AK came over to my house and we made vegetable dumplings! I had made the filling earlier on [9am, to be exact], using my brother's drink blender. Actually, it's also a solid-ingredient blender, and it chops carrots and tofu really well! The filling included carrot, extra firm tofu, garlic chives, bean sprouts, and some soy sauce... and PLENTY OF PEPPER. Perhaps there was way too much pepper...
We used premade dumpling wrappers, because it is seriously time consuming making my own dumpling wrappers. My mum used to do that when I was ... 5, and we didn't have any Chinese supermarkets nearby in Australia. She used to flatten out tons of little dubloons of flour, and I used to use the rolling pin and make irregular ovals. The wrappers were much thicker then, and tasted much better than these ones [more gluten, I think, and more transparent and chewy]...
The lettuce leaves are there to prevent the dumplings from sticking. However, at least two dumplings DID stick to the pan. :(
YEAH DUMPLINGS! This was also a great time to catch up on life and college, and to get fat for the winter. Haha.

Mind Trix...

No, not the cereal. I don't think I'm very fond of the Trix cereal.
I just got into the habit of writing "x" instead of "cks" or "ct". For example: connexion, blox. This way, I save a second when I write notes. Yay! Plus, I'm moshing together Ye Olde English and txting eng. I'll try stay away from that on this "grammatically correct" [but politically incorrect and socially awkward, and thus, potentially grammatically incorrect] blog.

Anyway, I think this image is a mind trick, because you THINK it's a typical generic burger on a tasteless bun with plastic tomatoes and leathery lettuce, and you THINK that those are prefrozen waffle fries, and you THINK that I'm sitting in a shady diner somewhere.
And, yeah, it's a burger, MADE OUT OF SPICY BEANS AND OTHER YUMMY STUFF SANS ANIMAL PIECES! And, yes, it's a lame tasteless bun that is saturated with mustard and ketchup [I really need to ask whether the chocolate milk, ketchup, jam, and peanut butter here has HFCS. I really need to know. I'm dying to know. Literally. I'm going to get mercury poisoning if I don't! Actually, I don't believe in the previous statement; it's just something that extremists have been screaming about for the past month or so. I'm lamely trying to make fun of them]. The tomatoes are fresh, and I saw a cook sticking fresh lettuce into the containers yesterday, which shows that this lettuce isn't seven days old. Which is quite reassuring. And, yeah, those are waffle fries [I love waffle fries. They just make fries so much more aesthetically pleasing], but they're most likely made from cut-up pieces of potato the same day they are drenched in oil, as the advertising in the cafeteria so audaciously announces... And yeah, I'm in 1920 Commons, which could be considered a shady diner. Especially when I'm sitting on the barstool chair staring out of the window, or lounging in a diner booth, alone, eating breakfast food at dinnertime [or vice versa. It works either way]. It gets really empty and shady at around 10 minutes before closing... it's when people look at you strangely when you decide to go in, because why would anyone want food 10 minutes before closing?
It's even worse when I'm alone, which tends to be the case since I haven't made friends yet. Or, at least, friends who eat at the same time as me. My schedule is quite horrific.
